Nurture November Day 7 Heart Healthy Diet

There is a lot of debate out in the world as to what is the best diet to follow. (diet here is defined as all that we eat not that we need to lose weight) My cardiologist would like for me to be a vegetarian or plant based. My neurologist recommends either a plant based diet or a Mediterranean one.


For years I have followed a low carb diabetic diet. This worked best for me to feel healthy and keep my A1C low. After I had the stroke, food didn't taste very good to me. I lost my appetite for most things and I quickly lost 20 pounds. That the best way to lose weight.


Now that most food tastes ok, some really good, I've moved to more of a Mediterranean diet that focuses on oil olive, nuts, vegetables, fish, chicken and beef infrequently. I still need to adapt the meals to make sure they are low carb. I am also incorporating some plant based recipes.

I can see how your cardiologist wants you to stay away from meat and dairy. Keep that evil, blood vessel narrowing cholesterol away, right? So a little sushi is OK though? If you go low on the white rice?

I think it would be hard to go vegetarian. I don't follow any particular diet either but try to keep my portions smaller, especially meats.

I hear from a lot of my Stroke Survivors who have changed to a strictly vegetarian diet. I am so impressed. I can’t see how I can do this succussfully. I, like you, keep meat portions small. We have even switched to using smaller plates.

I don't follow any particular diet plan for healthy eating but I too love some of the Mediterranean recipes. Your salad looks deliciously healthy!
